How not to screw up an omelet?

Omelets. The food that's almost as versatile as pizza. You can put just about anything into an omelet. I sautéed onions, green peppers, and tomatoes. 


Scrambled two eggs. 
 

Diced some ham. 


I use a seasoned cast iron skillet to cook our eggs. I pour the scrambled eggs into the skillet ( we have a gas stove, and I put the heat on medium low) and let it start cooking. I put the toppings in the center then cover with a lid. The eggs cook completely with the lid on. Now it's ready to plate.

Hankering for Thumbprint Cookies 👍

I'm not sure why they sound soooo good right now, but now there is some order to the kitchen again I decided to bake! 

The ingredients were on hand and the whole process simple. 

Ingredients: 
1 stick of room temp butter
1 cup of flour
1/4 cup of sugar
1 tsp of vanilla extract
1 egg
Pinch of salt 

Preheat the oven to 350 degrees. 
Mix the butter and sugar until blended. 
Next add the vanilla extract, flour, egg, and salt. I used a hand mixer to combine everything. 
Now for the somewhat messy part. You'll roll about 1 inch balls of dough and place on an non greased cookie sheet. I kept mine about two inches apart. I've never made them, so I'm not sure how much they'll bake up. Time to put in your thumbprint! After each dough ball has your very unique fingerprint on it, it's time for the jam. I used strawberry jam. Don't over flow the dent or your jam will spill over while baking! 
Place these little fellas in the oven and bake for 10-12 minutes. 
WAIT! For them to cool before you eat one! The jam will be lava in your mouth!

Yats Drunken Chicken

On this lovely gray day I decided to figure out a copy cat drunken chicken recipe. Yats is a Cajun/creole food joint that has two locations in the Indianapolis area.  Their menu changes daily, but they have a couple main dishes. I love the drunken chicken! It has spice and full flavor. I could never just pin point one flavor, they blend so well together. 

Here's the ingredient list I followed:
I omitted the sesame seeds, I'm not a fan. Of course I used my crock pot! I put everything in the pot. Took the chicken out when it was done to dice it up. Put it back it and kept it on low till dinner time. If you don't own a rice cooker, I recommend you buy one. They're not expensive and easy to use. No need to watch a pot. 

Final product: it's muy caliente. Haha!

Crock Pot Chicken n Dumplings

I thought I'd bust out the crock pot once again. Good thing too, cause this is delicious! If I had known making dumplings was this easy I would have tried this long ago! In the crock pot I cooked 3 boneless skinless chicken breast with rib meat attached in about 2.5 quarts of chicken broth and chicken stock I had made. Left the pot on high for a few hours and the chicken was ready for shredding. 

The dumplings: 2 cups flour
1/2 a teaspoon of baking powder
Pinch of salt
2 Tbsp of butter
1 cup of milk 
Mix the ingredients together and you get a big dough ball. Flour a surface you can use to flatten and cut up the dough. I didnt have anything fancy to cut the dough with, so I used a pizza cutter. Plop the cut up pieces in the crock pot to cook. 
Now I was starving, the crock pot was on low for about two hours, and I dug in. But first I whipped up garlic mashed potatoes to go on the bottom of my bowl.

Guinea Pig Husband

Today I'm trying a new spin on the hamburger. I've made burgers before but always had the issue of the edges falling apart or even the whole thing splitting in half!
This time I added an egg into the ground beef. Fingers crossed that'll glue them together. I sneaked in some grated carrots in there too. What Andy doesn't know won't kill him, right? A little bit of salt, pepper, cumin, and soy sauce then you're finished. 
I'm not a fan off stuffed burgers but hey, why not try jalapeño popper burgers? They sound good. I diced up 3 jalapeños from our garden. Mixed those in with Greek yogurt cream cheese and shredded cheddar. 
Assembling was like making little beef pies. Sorry there are no pictures, but I did not want to touch my phone with beefy hands. Cooked the patties in a pan then had to keep them in the oven until the hubby got home. 
I'm a fan of baking bacon! Easy, no oil splashing on skin, and a easy peasy clean up.
I used up the last tomatoes from the garden. 
The end product was GOOD! Enjoyed by the people, drooled over by the dogs. 
It's def. not the fanciest of photos. But it beats going to a fast food joint!

Pin win of the week

Brought to you by Kalyn's kitchen. Now I added my own twists but it turned out pretty good. I prepped the night before and all I had to do was pop it in the oven. I added tater tots to the mix. What can I say? I love some tater tots. 


The only issue I had was that the broccoli gave off water. Made it look like the eggs weren't finished cooking. Other than that is was delicious. 


Another pin win I enjoy are chick pea blondies. It's a great way to sneak in healthier ingredients! It's g-free and something I could share with my nieces and nephews who have dietary issues. This recipe is from Bakenbeebz.  My picky Mom even tried them!
